The idea for the Jack Allen’s Kitchen Cookbook stemmed from a magazine story I wrote on one of Jack Gilmore’s Texas road trips to visit the many farmers and purveyors that supply food to his restaurants. Listening to his dedication to serving good home-style cooking to Texans through the lens of the people who grow and produce the ingredients was an inspiration that merited a book to share with others.
